Dance Party

My dad loves to turn on music and dance with the kids. He has not done it for awhile, but last Sunday he turned on his jock jams CD they all went crazy! Even Sox the dog was invited to join in on the fun!

A little YMCA
My mom and dad recently purchased a blue ray DVD player and to show off the sound and quality my dad introduced Lucie, Jack and Brig to the introduction of Top Gun. They LOVE watching the first few minutes of the show where the planes are taking off and landing. Brig is always asking to watch the airplanes. After the dance party my dad turned it on for them to watch. Jack told us, "everything is better in blue ray!" He has heard grandpa say this just a few times!
All tuckered out!

THANKS DAD/GRANDPA for a fun evening!

Merry Christmas

Oh the fun we have had the past few days! We have tried to enjoy and make Christmas last as long as possible....
We enjoyed Christmas day...relaxing with family! The snow has been fun and we were able to go tubing thanks to Nick and my dad. We went and saw Marley and Me, which we highly recommend. We went to a Taylor family Christmas party and saw Great Grandma Taylor.
We hope that you have all had a good holiday!

Traditions

Every December we look forward to our countdown to Christmas using our socks. We have 24 socks that we pin up and then every night the elves and reindeer visit our house and either leave a gift, service opportunity, or instructions to do something like read the nativity story and have hot cocoa! This has become a family tradition that we all look forward to and it has kind of evolved each year to bring on new meaning or experiences.

One night the elves and reindeer left all the materials and instructions to build our own indoor frosty!

The other thing that we have really enjoyed doing this year is learning about our Savior in the scriptures and with pictures. In the December issue of the Friend magazine they put out a countdown to Christmas with a scripture and picture reference from the gospel art kit. I personally have really enjoyed reading these scriptures and learning new things about the life of Christ.
I love this time of year...the smells of Christmas, the music, family time, the Christmas tree, seeing people give to others. Just last week I was pulling into the parking lot of Lucie's school and they were loading up all the food and supplies they collected this week. What an awesome sight! Most importantly I am thankful for the Savior's birth. Even though this month feels like it flies by I love that whatever the activity might be we are trying to reflect on our love for the Savior and His birth and sacrifice for us.
Merry Christmas!

it's beginning to look a lot like CHRISTMAS!

We are going to have a white Christmas!
It is so pretty!
We had a pretty good size storm this week that left at least 10 inches of snow in our yard! My mom, Nick and Trent spent at least 3 hours trying to clear all of the snow from the sidewalks and driveways. The snow was falling so quickly that the walks were covered again by the time they made the rounds.

Class Christmas Parties

Both Lucie and Jack had Christmas parties at school. Santa visited Jack's class. Jack looks like he was unsure of sitting on Santa's lap, but he really was not. He was excited to tell him that he wants a football helmet!
Lucie's class made gingerbread houses using milk cartons. I was impressed how creative the kids were in their decorating. Each house looked very unique! The kids gave their awesome teacher a tree skirt with all of their hand prints!

Gingerbread Houses

Trent's family had the tradition of making gingerbread houses every year. They would make them to sell so that they could earn money to buy Christmas presents for their siblings. They would make 100-150 every year!!
We were so excited to have Trent's mom help us make gingerbread houses this year. She is a pro at assembling and decorating! This is Kama assembling a house...she browns sugar to use as glue to put the houses together. When they were selling them she wanted every part of them to be edible.

All of my family came over to decorate a house!

Grandma teaching Lucie house to put frosting on the roof.

The finished houses! I cannot imagine making a 100 of these. That would take ALOT of patience!

Ruby's Blessing

Ruby was blessed on December 7th. It was a special day to have Ruby blessed. We are very thankful for all the family that came and supported us. It was so nice to see so many of you that we have not seen for awhile. It was also very special that we were able to share this day with the Ovards and that Sophia was able to be blessed as well.

Grandpa and Grandma Schoonie Visit

Grandpa and Grandma Schoonmaker came to visit and be here for Ruby's baby blessing. Lucie and Jack enjoyed having grandpa read and sing to them at bedtime.

The potato assembly line!
Washing and wrapping baked potatoes for the luncheon after the baby blessing.

We appreciated all the help and the opportunity to visit with grandpa and grandma Schoonie!

2 Months

Ruby and Sophia at 2 months old!
One of Noelle's clients was so nice and gave them these matching outfits! I love when we lay them by each other because one of them usually is touching the other one on the hand or in this picture they were laying on a boppy pillow together and Ruby kept trying to snuggle up to Sophia. They are both such sweet girls!

memories...
We bought some oranges and Jack wanted to save one for Ruby when she gets "huger and huger!"
Throughout the month of December Jack kept telling me that "Ruby really wants a pirate ship for Christmas!"
Lucie was talking and playing with the girls one day and then she came to me and said, "I wonder what they are thinking." I know I always wonder this as well...I thought it was really profound of Lucie to think this as well.
When Ruby received her 2 month shots Lucie was so sad. She sat in the corner with her hands over her ears crying.

Random Pictures and Memories

Trent's brother and wife visited us the week of Thanksgiving. This is their little boy Hyrum with Lucie and Jack. He is 8 months old and was just starting to crawl when he was here. Lucie and Jack had a lot of fun coaxing him to different places around our family room and down our hallway! We had a fun evening visiting!

To me these are the sweetest moments when I walk into a room and see Lucie reading to Jack. This morning they were in their room with the door shut and I thought for sure I was going to walk in and find the room a disaster...but not even close they were on their beds and Lucie was reading to Jack and telling him that someday he will be able to read and then he can read to Ruby! Priceless!

I know I post a lot of pictures of Jack sleeping....but these moments are rare and I think he looks absolutely so sweet! One night we could not find where he was sleeping after we had put him to bed. We looked in all the usual places...under his bed, laying on the heat vent, in Ruby's room, but no Jack. We found him sprawled out on our bed (picture on the left)!
The other place he is really liking lately is our recliner in our family room. He lays across the chair in the afternoons and sometimes he falls asleep. He is completely asleep in this picture. I was talking to him and he was not answering back. I had to bend down to see his eyes underneath the hat to know for sure that he was asleep. I have to point out his outfit as well...his choosing...camo warm-up pants, sweater vest, red sox jacket and hat! He is loving clothes these days and going through his closet to pick what he wants to wear. I was getting a little annoyed with having to refold his whole closet everyday so I told him whatever clothes I find on the floor are going to be donated to charity! He has stopped the tossing frenzy! I love my little buddy! Lately he LOVES to play to games...a few of his favorites are chutes and ladders, candy land, matching games, storybook game, and the jelly bean game! We usually play a couple of games every afternoon! I love the time that we get to spend together.
A few other memories...
One day after we dropped Lucie off at school Jack asked what we were going to do when we got home. I told him we were going to make banana bread. He replied with "you put a smile on my face!"
Lucie goes to Spanish class once a week at school. She loves pretending to speak in Spanish around the house. Sometimes she will make up a Spanish word and then ask me what she said. I reply with I don't know and she will then tell me what she is saying. The funniest one was, "mom I am saying dryer sheets." Um yeah, I am sure you are learning the Spanish word for dryer sheets in Kindergarten!
Then last week Trent's mom took Lucie and Jack to buy a Christmas present for Trent and I. They have both been trying soooo hard to keep it a secret. The other night we were driving in the car and Lucie replaced a made up Spanish word for what our present is at the same time Jack said the real thing in English!

Thanksgiving

We spent Thanksgiving at my uncle and aunts house. We had such a good time! LOTS of good food and good company! Lucie and Jack had been counting down the whole month of November to see cousins and I think Lucie had told everyone that she came in contact with how many days until she was going to see them! They had fun playing outside and doing art projects. I love the center picture with Lucie and Macie. Lucie's face is expression is awesome...she had bubblegum ice cream and she was looking at like she had just scored big time!
This Thanksgiving I was very grateful to be with family and to spend time with them. It is the little things in life that mean the most.

Story - Simple White Envelope

I love Christmas stories...Trent had actually been looking for this story because he wanted to share the idea with the YM in our ward. He had not been able to find it and then his aunt and uncle sent it in an email today. It contains a really great idea and message.
Simple White Envelope
It's just a small white envelope stuck among the branches of our Christmas tree. No name, no identification, no inscription. It has peeked through the branches of our tree for the past 10 years or so.
It all began because my husband Mike hated Christmas --oh, not the true meaning of Christmas, but the commercial aspects of it -- the overspending, the frantic running around at the last minute to get a tie for Uncle Harry and the dusting powder for Grandma -- the gifts given in desperation because you couldn't think of anything else. Knowing he felt this way, I decided one year to bypass the usual shirts, sweaters, ties, and so forth. I reached for something special just for Mike. The inspiration came in an unusual way. Our son Kevin, who was 12 that year, was wrestling at the junior level at the school he attended. Shortly before Christmas, there was a non-league match against a team sponsored by an inner-city church. These youngsters, dressed in sneakers so ragged that shoestrings seemed to be the only thing holding them together, presented a sharp contrast to our boys in their spiffy blue and gold uniforms and sparkling new wrestling shoes. As the match began, I was alarmed to see that the other team was wrestling without headgear, a kind of light helmet designed to protect a wrestler's ears. It was a luxury the ragtag team obviously could not afford.
Well, we ended up walloping them. We took every weight class. And as each of their boys got up from the mat, he swaggered around in his tatters with false bravado, a kind of street pride that couldn't acknowledge defeat. Mike, seated beside me, shook his head sadly, 'I wish just one of them could have won,' he said. 'They have a lot of potential, but losing like this could take the heart right out of them.' Mike loved kids -- all kids -- and he knew them, having coached little league football, baseball, and lacrosse.
That's when the idea for his present came. That afternoon, I went to a local sporting goods store and bought an assortment of wrestling headgear and shoes and sent them anonymously to the inner-city church. On Christmas Eve, I placed the envelope on the tree, the note inside telling Mike what I had done and that this was his gift from me. His smile was the brightest thing about Christmas that year and in succeeding years. For each Christmas, I followed the tradition --one year sending a group of mentally handicapped youngsters to a hockey game, another year a check to a pair of elderly brothers whose home had burned to the ground the week before Christmas, and on and on. The envelope became the highlight of our Christmas. It was always the last thing opened on Christmas morning, and our children, ignoring their new toys, would stand with wide-eyed anticipation as their dad lifted the envelope from the tree to reveal its contents.
As the children grew, the toys gave way to more practical presents, but the envelope never lost its allure. The story doesn't end there. You see, we lost Mike last year due to cancer. When Christmas rolled around, I was still so wrapped in grief that I barely got the tree up. But Christmas Eve found me placing an envelope on the tree, and in the morning it was joined by three more. Each of our children, unbeknownst to the others, had placed an envelope on the tree for their dad. The tradition has grown and someday will expand even further with our grandchildren standing around the tree with wide-eyed anticipation watching as their fathers take down the envelope. Mike's spirit, like the Christmas spirit, will always be with us.
May we all remember Christ, who is the reason for the season, and the true Christmas spirit this year and always.

Happy Thanksgiving

The Early Bird Gets the Worm

For the past few days Jack has decided that he likes to get up at 6:30am. This is great on school days because we have plenty of time to get ready, but on days off it is not so fun. Yesterday Trent told Jack that he could sleep in today because we did not have anywhere to be. Lucie, Jack and Trent were joking about the saying "the early bird gets the worm" and Trent told them whoever was up before 7am this morning would get to eat a worm!
This morning at 6:45 Trent hears Lucie and Jack's bedroom door open and then close again. A few minutes later
Jack hollers down the hallway - dad I have to go to the bathroom really bad.
Trent - ok then go
Lucie (in a panicked voice) - will he have to eat a worm, i have tried to keep him in here as long as possible!

Tasty Tuesday - Confetti Corn Quesadillas/Creamy Avocado Dip

I have not done a tasty Tuesday post for quite some time. I actually feel like cooking again (which is very nice) and it is fun to try new things. I made the quesadills and avocado dip a couple of weeks ago and they were both so good. I made some modifications, which I listed to the side of each ingredient.

Confetti Corn Quesadillas - familyfun.com
1 cup fresh corn kernels (about 2 ears) I used canned corn
1 cup grated zucchini, squeezed dry did not use because I did not have any on hand
1/4 cup chopped cilantro
1 jalapeno pepper, seeds and ribs removed, chopped (optional)
1 1/2 cups drained and rinsed canned black beans (one 15-ounce can)
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 teaspoon chili powder
2 cups shredded Monterey Jack we just used a Mexican blend of cheeses
8 large (burrito-size) flour tortillas we buy uncooked tortillas so we just cooked them on the grill - no oil
2 tablespoons vegetable oil did not use

Step 1
In a large bowl, gently toss together the corn, zucchini, cilantro, jalapeno, beans, salt, pepper, and chili powder. Stir in the cheese.

Step 2
Heat the oven to 200°. Set the tortillas on a work surface. Put about 1/3 cup or more of the filling on half of each tortilla, spreading it to the edge and then folding the other half over it.

Step 3
In a large nonstick frying pan, heat 1/2 tablespoon of the oil over medium heat. Add 2 of the quesadillas to the pan and cook them for about 2 minutes per side, until the cheese melts. Transfer them to a baking sheet and keep them warm in the oven while you cook the remaining quesadillas, adding a bit more oil to the pan for each batch. Cut the quesadillas into wedges. Serves 4 to 6.

Tips: Choose ears of corn with bright green husks that are tightly closed. The ends of the corn silk should be golden brown, not pale -- an indication that the corn was picked too early.

To easily remove corn silk from the kernels, hold the ear in one hand and rub downward with a wet paper towel.

To remove corn kernels for a salad or salsa, stand an uncooked ear in a shallow bowl and use a sharp, thin-bladed knife. For chowder, add another step: reverse the knife and run the dull side down the ear to press out the rest of the corn and its milk.

Creamy Avocado Dip -
We dipped the quesadillas in this...

4 avocados
1 cup fresh cilantro
1/2 cup sour cream
1/4 cup fresh lime juice
1 jalapeño, seeded and roughly chopped
Kosher salt and black pepper
Cut-up vegetables for dipping (such as carrots, cauliflower, broccoli, and jicama)

Scoop the avocados out of their skins and place in a food processor.

Add the cilantro, sour cream, lime juice, jalapeño, 1 teaspoon salt, and 1/4 teaspoon pepper and blend until smooth. Serve with the vegetables.

Yield: Makes 8 servings
